Mastering The Art Of Cooking For One


Just call me the single Julia Child. Creating meals for one is kinda becoming my thing. I’ve been living on my own for a while, but only in the last year or so have I really started making strides in homemade cooking. Those frozen Lean Cuisines just weren’t cutting it anymore. I really enjoy time spent in the kitchen, and the benefits of homemade meals (clean eating!) can’t be beat.

One of my go-to meals (I make this at least three times a week – still working on variety): healthy shrimp tacos.  These tacos take literally 15 minutes to make and are ten times healthier than the fried, smothered in cheese tacos you find in a restaurant, although we all need those sometimes too!

I promise my meal is just as tasty as this half eaten masterpiece from El Vaquero a few weeks ago!

Ingredients: Two Trader Joe’s corn tortillas, TJ frozen brussel sprouts, TJ frozen asparagus, grape tomatoes, 1 quarter (a side sliver) of an avocado, and 7-10 medium size frozen shrimp (uncooked, tail off, peeled and deveined). Fresh veggies/shrimp are even better, but I use frozen as they last longer and are much more convenient – I’m still learning!


First, warm the tortillas on the stove and then spread on the avocado. Boil the brussel sprouts for about 5 mins or until almost cooked. In the meantime, cook the asparagus, tomatoes and shrimp on the stovetop. When the shrimp is cooked through (approx. 5 minutes), throw in the cooked brussel spouts to mesh all flavors and voila – dinner is served! This entire meal is about 350 calories, very filling and tasty to boot. Feel free to throw in some soy sauce and/or seasoning for additional flavor. Bon Appetit!
