Healthy Lunches & Trivia Dinners

I can't believe this week is practically over (8 more work hours!). Yesterday I made the poor decision to workout after work. I stopped working at 9pm, so yea, that workout didn't happen. I did take the time to go for a quick walk around the neighborhood. You can see I have impeccable timing…


I made sure to workout early this morning. Sweating makes me happy, and if I plan it early, I get it done. I started with a stretch/fake yoga session on my mat...


I then ran three miles (9:35; 9:28; 9:45) and then "ellipticalled" (can we make that a term, because I hate saying "I ran on the elliptical.") for 1 mile...


After last weekend's gorge-fest, I'm eating really well this week (as I type with one hand and eat cheerios with the other…it happens). I baked chicken last night and added it to my lunch salad extravaganza. Mixed greens, baked chicken, grape tomatoes, celery, cucumber, pink lady apple and sugar snapped peas. No dressing, because I don't need it, but feel free to add a yummy low-fat or oil and vinegar option... 





















After work, I met the friends for Trivia Night at the Grandview Cafe. I had the awesome Luna Burger (Vegan burger) with broccoli instead of fries (no one said healthy eating was fun all the time). We did not win, but it was a blast!
