Celebrate America & My First Blue Apron Experience

Is there anything better than a Friday that feels like a Saturday? I don't think so. I hope you all are getting ready to celebrate America all weekend long. And like all these holidays that turned into excuses for lots of booze and BBQs (no complaints here!), take time to remember why we have off from work today. Happy Independence Day!

Rewind to Wednesday's workout. I went to the gym to get in an easy run on the treadmill. It's really pure laziness that I won't work on my pacing issues outside - it's so difficult for me to go as slow as I need to when I'm running outdoors - so I go to the gym to just set the pace and cruise. I did 12-ish minutes of weights afterwards and was a sweaty, gross, tired mess when my workout was complete - my favorite look...

I hopped on the Blue Apron bandwagon (PS - this post is not sponsored. I just love Blue Apron that much I'm going to talk them up :)), and I'm LOVING it! If you haven't heard of Blue Apron, it's a meal service of sorts where you order either the 2-person or 4-person meal plan, and they send you all the ingredients you need for 3 meals per week. I'm doing the 2-person plan and it costs about $60/week for 3 meals, but you have the option of skipping weeks and not being charged. 

My first box arrived on Wednesday, and I invited my friend up to cook dinner with me. We made the shrimp rolls because they recommend cooking the fish first to keep it fresh. 

Besides the easiness of the meal - this took us maybe a half hour - I love that they give you just enough of the ingredients you'll need to use. I can't tell you how many times I buy a huge bottle of a certain spice only to use a teaspoon. With Blue Apron, they give you only what you'll need for your meal.

On Thursday morning, I had a ROUGH run. My legs have been very tired lately, so I'm going to enjoy my rest day Friday. 3.5 miles that included a few laps at the track and 2 stop breaks. I came back and did a few strength training exercises to make me feel better about my awful run... 

I saw Jurassic World last night and sat in those awesome recliner seats for the first time ever. I may have to start going back to the movies just for these seats...
