Short Workouts Are Better Than No Workouts & Some More Cooking

Happy Hump Day! I'm counting down the days until Saturday so I can happily be back here. Grown up life is rough.


Before sitting at the beach all day on Sunday, I did my own Spin workout. I was going to take the 9am class, but showed up at the gym at 9:05, and I do not like walking into classes late. 

56 minutes on the bike followed by some strength training... 


I met up with my friend later on Sunday for some Sushi and Women's World Cup watching. We ate at this new sushi place in town, and it was quite good. We ended up splitting our rolls in half, so I got to try two rolls. My favorite way to eat dinner! 


We then saw Carli Lloyd score her hat trick! So awesome. PS Christie Rampone graduated from our high school. Our town is pretty proud of that :) 


Monday was a rest day, so I got my nails done. I will go months and months without one manicure and then go twice a week. I can't explain it...


I cooked up another Blue Apron meal on Monday night - Black Bean and Red Quinoa Enchiladas. This meal took a little longer - maybe because I was cooking on my own or maybe because there was more chopping - but it came out fantastic! 


I paired one enchilada with a salad to make it a tad healthier...


On Tuesday morning, I woke up late and went for a very short 30 minute run. Do what you can with the time you have. Even 30 minutes is better than no run at all. My legs felt like two bricks the entire time. I think I was slightly dehydrated and the humidity was just disgusting, so I'm drinking lots of water today and moving my run indoors. Fingers crossed it feels better! 


If you could be anywhere in the world right now, where would you be? On some island somewhere that's not Manhattan :)
